Ricotta and Spinach Gnocchi

If making your own gnocchi sounds daunting to you, don’t worry, this is actually really easy and fun to make. It’s fun to eat too!

1 14oz container of ricotta cheese

1 10oz package of frozen chopped spinach
1/3 cup parmesan cheese
1 large egg
1-2 cups of flour

dash of nutmeg

Heat up spinach in microwave for 5 min on high. Drain excess moisture from spinach and ricotta using a sieve or cheesecloth. Combine cheese, spinach, egg and nutmeg. Gradually add flour until sticky dough forms. On a floured surface, take 1/4 cup of dough at a time and shape into a long rope with the width of a cigar. Cut into 1″ pieces (I used a pizza cutter). Working in batches, add gnocchi to boiling salted water one at a time. Cook for about 4 minutes after they rise to the top. Remove from water with a slotted spoon. Serve with your favourite pasta sauce or pesto.
I’ve never made gnocchi before, but my friend was telling me about this recipe that she made with her son the other day and I just had to try it too. My family loved it! Our dinner was so much fun that I had to take lots of photos. Bennett was covered in sauce. He was finished his first helping before I even sat down! Everyone thought it was very yummy, including me. I can see this recipe becoming a family favourite.
Tony says we need to have gnocchi more often (or at least I think he said gnocchi? He might have meant something else).
