Coconut Banana ‘Ice Cream’

February 25, 2011 by Megan 8 Comments

A clean eating dessert made with frozen bananas and coconut milk. It tastes so good you won’t believe it’s good for you too!

5 large bananas
1 can light coconut milk

Peel and slice bananas. Freeze them overnight. In a food processor or blender, blend together the frozen bananas and coconut milk until smooth. Serve immediately.

This recipe comes from The Gracious Pantry, a great site for Clean Eating recipes. I’ve made her Banana Chocolate Ice Cream and instantly fell in love with the idea of using frozen bananas as ice cream. It’s brilliant! We all really loved this coconut version, and I especially loved the simple and nutritious ingredients.

I just made banana ice cream and blogged about it too! I definitely want to try the coconut version. I’ve been on a coco-banana kick lately. My morning oatmeal last week was 1/2 cup oats, 1/4 cup coconut milk, 3/4 cup water, 1 banana. Delicious!

I’ve made this just with banana before, but hadn’t seen the coconut milk addition. That is a great idea. Thank you very much for sharing!

I make this a lot for my kids, but haven’t tried coconut milk! Whoever originally thought of making “ice cream” out of frozen bananas was a genius. πŸ™‚

Wow! What a great idea! I actually have some frozen bananas in the freezer right now–and a can of coconut milk! I know what’s for dessert tonight πŸ˜€
