Marshmallow Pops for Valentine's Day

February is a pretty special month.  Not only is it the month of Valentine’s Day, it’s also the month of my daughter’s birthday, and the anniversary of when I met my husband. Coincidentally, Ayla’s due-date fell on the actual day of our anniversary, which I thought was kind of neat.  This year, I’ll have known Tony for 15 years, and our youngest child is turning two.

My sweet little pixie.  I think it’s harder with the last baby…knowing she’s my last, it’s harder for me to let go of her being a baby. At the same time, I’m looking forward to a lot of things, like being free of diapers and being able to have conversations with her. Watching her become her own little person with big opinions is an interesting and exciting experience, as it was (and still is) with my first two.

We had a birthday party for her this weekend, and since it’s fairly close to Valentine’s day, we made these marshmallow pops with heart-shaped sprinkles.

I can’t take credit for the idea of marshmallow pops – this came from Pioneer Woman. My oldest son, Cole, bought me a Pioneer Woman cookbook using his own money at the school book fair, because he knows how much I love to watch her show and read her blog. He’s so sweet, it makes my heart swell.  Anyway, I saw this recipe for Christmas marshmallow pops in her cookbook, and thought they would be fun to make at a birthday party.

Basically, you just melt white chocolate (or regular chocolate), dip marshmallows in the chocolate, and then decorate them with sprinkles.

I dipped lollipop sticks in the melted chocolate and stuck them into marshmallows, letting them set ahead of time, so that the kids could just grab a stick and start dipping and decorating.

I kept the chocolate warm in a mini crockpot. A fondue pot would also work. I poked holes in the bottom of an egg carton so we could put the pops in them to dry.  It worked alright, but they fell over very easily and it started to get annoying, so I’d recommend a deeper cardboard box, or maybe a block of foam to hold them up.

If you don’t want to fuss with sticks at all, you don’t have to. These can easily be made without a stick by just holding the bottom half of the marshmallow as you dip the top half into the chocolate.  Set them on a plate with the chocolate side up, and add sprinkles on top.  That’s what I did with the leftover marshmallows, and the boys plan on taking them to school to give out with their Valentines.

These are a fun and easy treat to make with kids on Valentine’s Day, or at birthday parties.  Really, you can adapt them to pretty much any special occasion. They’re very versatile.

 Marshmallow Pops

You’ll need:

  • Lollipop sticks
  • Chocolate or white chocolate chips
  • Marshmallows
  • Sprinkles
  • Cardboard box, a block of foam, or egg carton – poked with holes

Instructions:

In a microwavable dish, melt chocolate in the microwave, stirring every 30 seconds until smooth.

Dip lollipop sticks about 1/2″ deep in chocolate, then poke them into the marshmallows.  Place them on a plate with the sticks pointing up and let them set for at least 20 minutes before moving t the next step.

Dip the marshmallows into the chocolate, tapping the stick on the edge of the dish to remove excess chocolate. You can take a butter knife if you need to smooth it out a little.

Hold the stick over a plate, and add sprinkles over top of the chocolate.

Set the marshmallow pops in the holes of your box/block/carton and let the chocolate set.
