Mango Chili Pork Tenderloin with Mango Salsa#PuloCuisine

 

Grilling season is upon us, and I’d love nothing more than to sit out in the sun with a cold drink while grilling up a tasty dinner for us. Unfortunately, we have no deck. Tony tore it down last spring, with plans to replace it over the summer, but due to unforeseen circumstances — including a nail through his foot, and a rotten wall — it just didn’t happen. The bad luck continued this year, when he and his buddies bought a trailer to use for their “guy getaways,” only to find it was completely rotten inside and had to be gutted. So that project has taken up most of his time, leaving our deck still unfinished.  If we have a deck by the end of the summer, I’ll be thrilled, but I’m not holding my breath.

Since our kitchen is on the 2nd floor, it’s not exactly convenient to BBQ outside, but in the meantime, I’m making do with my indoor grill. It does a pretty good job, and when I marinate the meat first with Pulo Cuisine marinades before cooking it on the grill, I get an incredibly flavourful meat in no time at all.  This almost makes up for not having a deck to sit on while I grill…almost.

You won’t believe how easy it is to make this beautiful Mango Chili Pork Tenderloin with a fresh mango salsa using Pulo’s Mango Chili Marinade.  Just marinate the pork in the marinade, and grill it on the BBQ, using extra marinade for basting. The salsa only has 4 ingredients, so it’s really simple. When you serve it over the grilled pork tenderloin, not only does it look gorgeous, it tastes amazing!

I’ve often cooked pork with apples, but this is the first time I’ve tried it with mangoes. Wow! Move over, apples, because pork has a new soul-mate. I’m sure you’ll agree once you try this dish that pork and mangoes are meant for each other.  And I love the Mango Chili marinade for bringing the whole meal together — it has a perfect blend of sweet, savoury, and slightly spicy flavours.

I wasn’t sure what the kids would think, because sometimes they can be a little sensitive to spiciness, but luckily the spice is not overwhelming. Plus, they’ve had this marinade before in Mango Chili Sweet & Sour Meatballs and liked it, so I was hopeful.

I served this pork and salsa with rice and salad. You can see from Cole’s plate that he devoured the meat and mango salsa first, which is a good sign that he really enjoyed it.  Bennett and Ayla also approved. Ayla wasn’t crazy about the meat (she never is) but she loved the salsa.

Tony was so impressed with this meal. He complimented me on it several times at the dinner table, and after the kids went to bed, he mentioned again how much he liked dinner. So I’d say this recipe was a big hit!

Mango Chili Pork Tenderloin

Mango Chili Pork Tenderloin

Ingredients

  • 1 large Pork Tenderloin
  • 1/2 cup Pulo Cuisine Mango Chili Marinade
  • 1 mango, diced (about 1 cup)
  • 1/2 cup diced red onion
  • 1/2 cup diced cilantro
  • 2 Tbsp Pulo Cuisine Mango Chili Marinade

Instructions

  1. Add the pork and 1/2 cup of marinade in a bowl or a sealable bag and coat pork completely. Place it in refrigerator for 20 minutes or longer (ideally overnight).
  2. Over medium heat on a preheated BBQ or grill pan, grill pork tenderloin for 12 – 15 minutes, turning the meat every couple minutes and basting it frequently with the excess marinade, until meat reaches an internal temperature of 140 F.
  3. Remove meat from the grill and let it rest for 10 minutes, wrapped in foil.
  4. While it rests, make Mango Salsa by combining mango, red onion, cilantro, and 2 tbsp of marinade in a bowl.
  5. Brush the meat with one last coating of marinade, then top it with Mango Salsa.
