Stevia-Sweetened Pomegranate Lime Spritzer. No sugar, no alcohol.

It can be hard to find a decent sugar-free, non-alcoholic beverage to sip on over the holidays. I learned this the hard way three years ago, when I had gestational diabetes while pregnant with my daughter. (For more on that story, visit the blog I wrote: The GD Diaries)

I had GD with both my sons as well, but I wasn’t pregnant with either of the boys over Christmas (well, almost pregnant — they’re early September babies, so you do the math). Anyway, I discovered that having gestational diabetes over the holidays is more challenging than other times of the year. For one thing, people are constantly offering you goodies you can’t eat. Even my midwife tempted me with a plate of Christmas cookies in a brief moment of forgetfulness. And then there are holiday parties. People obviously didn’t to offer me alcohol when they saw my protruding belly, but the alternative was usually juice or a sugary mocktail of some kind. I’d end up just having water. Don’t get me wrong, I like water and it’s not a big deal, but I would have liked something like this pomegranate lime spritzer back then.

This is a great drink for kids, too. The kids were intrigued by the pomegranate seeds. They had fun scooping them out of the cup and popping them into their mouths. Cole spotted the remaining pomegranate slices I’d left on the counter and quickly devoured all the seeds before anyone else got to them.

I think we’ll make these drinks again for New Year’s Eve with the kids. They like to have something special to sip on when we toast to the new year. These spritzers would be perfect!

Stevia-Sweetened Pomegranate Lime Spritzer

Prep Time: 2 minutes

Total Time: 2 minutes

Yield: 1

Stevia-Sweetened Pomegranate Lime Spritzer

Ingredients

  • 1 tbsp. pomegranate seeds
  • 1 tsp lime juice
  • 10 drops liquid stevia
  • 2/3 cup sparkling water
  • 1 slice of lime

Instructions

  1. Add all ingredients in a small glass. Stir gently.
  2. Garnish glass with lime slice.

Notes

For a Cherry-Pomegranate spritzer, I like to use Black Cherry Dasani Sparkling Water, and cherry vanilla NuStevia drops.
You can also garnish the glass rim with Epicure Berry Basil Rim Trimmer, if you’re okay with a little sugar.
