Jumbo pasta shells stuffed with cottage cheese and spinach.
1 tbsp olive oil
1 onion, diced
1 10oz package of frozen chopped spinach
2 cups of cottage cheese
1/3 cup parmesan cheese
1 egg
1 tsp oregano
salt and pepper
1 700ml bottle of pasta sauce
18 cooked jumbo pasta shells
1 cup shredded mozzarella cheese
Heat oil in frying pan on medium heat and cook onion until soft. Heat and drain spinach. Combine onion, spinach, cottage cheese, parmesan cheese, egg, oregano and a dash of salt and pepper in a bowl. Pour half of pasta sauce into a casserole dish. Stuff pasta shells with spinach mixture and arrange on top of the sauce. Don’t worry if it’s not perfectly tidy. Pour remaining pasta sauce on top of the stuffed shells. Sprinkle with mozzarella. Bake covered on 350 for 25 minutes. Remove cover and bake for another 10 minutes.
These aren’t hard to do, but if you want to make them even easier you could use smaller shells and just mix everything up together instead of stuffing the shells. I had fun stuffing them though, and my family seemed to like them. The kids weren’t in love with them or anything but they ate them. Tony said they were really good. I liked them too, I love any kind of pasta really.
