Balls of rice with a hidden treasure of ooey-gooey cheese in the middle. They’re fast, easy, and kids love them.
Click here for this recipe, from Weelicious. I haven’t altered it in any way from the original recipe so I won’t reprint it here. It’s perfect just the way it is. I used brown rice that I had left over from another meal. It was pretty sticky, which is what you want for this recipe. It took a little practice to form the balls, but for me it worked best if I made the ball of rice first, then held it in my palm while I pushed the cube of cheese into the ball with my finger, and then closed the ball up again. I didn’t bother with using a steamer, I just popped them in the microwave because it was quicker and easier. We had them for lunch, along with left-over butter chicken. Bennett liked them a lot. Cole wasn’t interested at all though; he was in a bad mood that lunch. It thought they were really fun and such a neat idea. Weelicious is one of my favourite sites for kid-friendly food ideas. I love her recipes, and especially her videos. Cole likes them too. When he first saw one he said ‘hey that’s you Mommy!’ Yeah, I wish!
