This post is dedicated to my older son Cole, who is 4 years old today. Happy birthday little man!
Cole LOVES french toast, so much so that sometimes we’ll have it for dinner, usually on an evening when Tony is working and it’s just the three of us. This is one meal that Cole will always eat. His favourite way to have french toast is stuffed with peanut butter, bananas, blueberries (if we have any) and syrup. Then he eats it like a sandwich.
Bennett likes it cut into squares with a side of maple syrup for dipping (he’s a purist).
This particular evening I decided to try adding hemp and chia seeds to the egg mixture, just to make it healthier and give it a little crunch. It was yummy!
I topped it with some agave nectar. This was the evening I lost my agave virginity, and it was a good experience. I liked it, maybe not as much as maple syrup, but it’s not bad. I have since used it in baking and I’ve been happy with the results so far.
I don’t really have an exact recipe for my french toast. I use a pie plate and Cole helps me crack a few eggs into it, then he stirs it up for me with a fork. He’s getting pretty good at it! Sometimes he even manages not to get any shells in there! Then we stir in a splash of milk, vanilla and a sprinkle of cinnamon. We dip in the bread (usually whole wheat) to coat it and throw it on the grill for a few minutes on each side.
