Moist banana muffins filled with the chocolately goodness of nutella.
3 ripe bananas
6 tbsp vegetable oil
1/3 cup sugar
1/2 tsp salt
1 egg
1 tsp vanilla
1 cup all-purpose flour
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
6 tbsp nutella
Mash bananas in a medium bowl. Add oil, sugar and salt; beat until well mixed. Add egg and vanilla; beat again until mixture is smooth.
In another bowl, combine flour, baking soda and baking powder. Sift over banana mixture. Stir in by hand using a rubber spatula just until moist.
Lightly grease a 12-cup muffin tin and pour a spoonful of batter into each cup. Drop a 1/2 tablespoon of nutella into the centre of each cup. Top them with remaining batter to completely cover the nutella.
Bake at 350F for 18 minutes or until tops are golden brown.
I came across a recipe for Nutella-Stuffed Breakfast Muffins on Babble the other day and I knew that stuffing a muffin with nutella was something I had to try. You may already know that I love the combination of nutella and bananas if you happened to have read my post on Banana Nutella Pancakes, so I figured you can’t go wrong making a muffin with this winning combination. I used a favourite banana muffin recipe of mine that I had adapted from a recipe that my children’s godmother gave me. They’re great muffins on their own, but the nutella center has taken them to a whole new level of deliciousness. Cole declared that these were very yummy and that we should bring them to his friend Hannah, whom we happened to be seeing today. We brought the muffins and shortly after I had some requests on my facebook wall for the recipe. So here it is, my brand new muffins just made today, here on my blog for your viewing pleasure.
