Some nights, it can seem like an insurmountable task to get a healthy meal on the table quickly.  At the end of the day, I have a million things on my mind, a tired toddler whining at my feet, kids relentlessly asking me questions, and all I want to do is sit down and have a glass of wine.  Instead, I have to think about dinner. It’s so tempting to order in or eat out, but really, it can be just as fast to make a healthy and delicious meal at home – if you have the right tools. And where do you get the tools to make real food really fast?  Well, I’ve discovered that Epicure is a great place to start.

I’ve mentioned Epicure before, in this post, and I liked what I tried then.  This time, I got to try even more of their innovative products and totally fell in love with them.

One of my favourite items is the crisper. This thing makes incredible fries!  Apparently it’s great for baking pizza as well, so I can’t wait to try that. It has lots of tiny holes so the air circulates and prevents your fries from getting soggy while they cook. It also has a non-stick surface, because there’s nothing worse than having your fries stick to the bottom of the baking sheet.  After I baked them on the crisper, the perfectly golden and crispy fries just slid right off onto my plate.

If you’ve ever baked sweet potato fries, you know how hard it is to make them crisp without burning them. This crisper did a pretty good job of keeping them from getting soggy or burnt. I coated to sweet potatoes with corn starch, cornmeal and Epicure pizza oven fries seasoning, and they were so good! Cole thought the pizza seasoning was a little too spicy, but I loved it.

Ingredients

  • 4 medium sweet potatoes
  • 2 tbsp. cornmeal
  • 1 tbsp. cornstarch
  • 1 tbsp. Epicure Pizza Oven Fries seasoning
  • 1 tbsp. olive oil

Instructions

  1. Preheat oven to 425F.
  2. Cut sweet potatoes into wedges and place them in a large bowl. Pour in the olive oil and stir the sweet potatoes until they are coated with oil.
  3. In a large sealable bag, combine cornmeal, cornstarch, and pizza fries seasoning.
  4. Place the sweet potato wedges into the bag, seal it and give it a good shake until the sweet potatoes are coated.
  5. Lay the coated sweet potatoes out on the crisper. Make sure to place the crisper over a baking sheet or cutting board in order to catch the excess cornmeal mixture that will fall through the holes.
  6. Place the crisper in the oven and bake for 24 minutes, flipping the sweet potatoes halfway through baking time.

Another really ingenious item is the steamer, because it cuts down on cooking time and locks in flavour. I used it to cook chicken souvlaki in less than 10 minutes!

It’s a miracle to me that I could make an entire Greek meal in so little time with the Greek Food. Real Fast meal kit. Equipped with my Greek meal kit, I deviated slightly from the usual Souvlaki with pita and used taco shells instead – just for fun.

I usually buy tzatziki sauce because I had it in my head that it was complicated and time-consuming, but it was a cinch to prepare with only 3 ingredients – Greek yogurt, grated cucumber, and Lemon Dilly Dip mix.

The Greek Dressing Seasoning made a perfect dressing to pour over cucumbers, tomatoes and feta for a quick Greek salad.  It made me wonder why I’m buying store-bought salad dressings when all it takes is shaking a bottle seasoning, oil and vinegar together to make my own dressing.

The Whine Critics all gave these Greek Tacos their seal of approval.  Taco shells made this meal fun for everyone, and the seasonings made it delicious.

These kits make it so simple and fun to create healthy meals with minimal time and effort. Even Cole was able to make Greek scrambled eggs practically all on his own with the help of Epicure spices (he wanted me to mention that here because he was so proud!).
