In my last post, I took a look back at the top recipes of 2014, and Slow Cooker Roast Beef was the #1 most popular post of the year. I can understand why, because it’s such a simple recipe (only 5 ingredients!) with incredibly tender meat and rich flavourful gravy. We have it quite often in our house. Actually, we just had it the other day for New Year’s dinner. This roast is wonderful with mashed potatoes and peas on the side. I even made Yorkshire pudding for New Year’s, to make it extra fancy, but that’s optional, of course.
In this installment of MOLO Monday, I’m making over leftover slow cooker roast beef into fajitas.
The most obvious choice for roast beef leftover is beef dip, and this roast recipe is perfect for that because it comes with a beautiful gravy already, but you can do so many other things with leftover beef. Fajitas are a great idea that you might not have thought of before. Because this slow cooker roast beef doesn’t have any spices or strong flavours, the leftovers are perfect for using in other meals, like these fajitas. Just add in cumin, chili powder, a dash of lime juice, and you have a brand new Mexican-flavoured beef.
I could eat it just like this and be perfectly happy. The great thing about fajitas though, is you can customize them to suit anyone in your family. I serve the fajita mixture with tortillas, and various topping options, like sour cream, salsa, cilantro, lime wedges, and cheese, then I let everyone create their own fajitas.
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Yield: 10 fajitas
Ingredients
- 1 tbsp. vegetable oil
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 small onion, sliced
- 1/2 tbsp. lime juice
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 2 cup shredded roast beef
- 10 small flour tortillas
- Toppings: sour cream, salsa, grated cheddar cheese, fresh cilantro, lime wedges
Instructions
- In a skillet, heat oil over medium heat. Add onion and peppers. Saute until softened, about 5 minutes.
- Add lime juice, chili powder, cumin, salt, and roast beef. Heat for several minutes, until beef has heated through and flavours have blended.
- Serve with tortillas and toppings.

So there you have it – two super easy meals that will wow your family. To make it even easier, I’ve done up a shopping list for these meals. Meal #1: Slow Cooker Roast Beef, cooked peas, mashed potatoes (just add a little butter, milk, and salt to taste). Meal #2: fajitas!
