Well, we’ve made it through the first week of spring break! Just one more week to go! I did my best to keep the kids occupied, but I had to work (I have a home office), so they had to entertain themselves a lot of the time. And that’s not a bad thing – it gave them a chance to get creative. They spent hours building Leprechaun traps, hoping a Leprechaun would leave them some goodies. And yes, they found some chocolate coins as a reward for their hard work the next morning.
I took a couple of afternoons off work so we could spend time together and get out of the house. We took the skytrain, went my downtown office, then to the art gallery. Another day, we went out for lunch at White Spot, then headed to the library and the mall.
Another great way to spend quality time with the kids and keep them busy is to get them to help out with dinner. The boys help with everything from meal-planning and grocery shopping, to meal prep and cooking. I handle the stuff like grating and chopping (we let Cole try once and let’s just say it didn’t end well!).
I love easy recipes like this Chicken & Broccoli Divan from Cook with Campbell’s for making with the kids. There aren’t too many steps involved, and it comes together quickly. I just chop up the broccoli and chicken, grate the cheese, and then they can pretty much take care of the rest.

Ingredients
- 3 cups (750 mL) hot cooked broccoli florets
- 2 cups (500 mL) cubed, cooked, skinless chicken breast
- 1 can (284 mL) CAMPBELL’S® Condensed Low Fat Cream of Broccoli Soup
- 1/3 cup (75 mL) 1% milk
- 1/2 cup (125 mL) shredded light Cheddar cheese
- 2 tbsp (30 mL) dry bread crumbs
- 1 tsp (5 mL) butter or margarine, melted
Instructions
- Arrange broccoli and chicken in 1.5 qt (1.5 L) baking dish.
- Pour mixture of soup and milk over broccoli and chicken. Sprinkle with cheese. Top with mixture of bread crumbs and butter.
- Bake at 425°F (220°C) until heated through – about 25 minutes.

The whole family loved this one! Ayla was adorable – she was trying so hard to put her thumb up,but she just couldn’t get it. She settled for raising a finger instead.
I liked how simple it was, and it reminded me of another favourite of ours: Classy Chicken! I think Cole liked this meal the best our of all of us. He said that of all the meals I’ve EVER MADE, this was the one he liked the best. Wow! I don’t think you can get a better review than that.
